Geschichtliche Entwicklung
Als Commonwealth-Mitglied orientiert sich Australien in Sachen Whisky natürlich stark am Schottischen Whisky. Tatsächlich war dieser Kontinent bis zum zweiten Weltkrieg der wichtigste Exportmarkt für schottische Whiskys. Noch heute ist Scotch die meistverkaufte Spirituose in Australien, dicht gefolgt von Bourbon, der vor allem bei der jüngeren Generation immer beliebter wird.
Es ist erstaunlich, dass ein Kontinent, der alles dafür mitbringt, nicht Whiskygeschichte geschrieben oder sogar einen eigenen Whiskystil hervorgebracht hat, ja nicht einmal eine eigene Whiskyproduktion aufweisen kann. Es gibt gutes Getreide, es gibt gutes Wasser und, noch wichtiger, es gibt den menschlichen Faktor: Einwanderer aus England, Schottland, Irland und nicht zu vergessen Amerika, die von zu Hause nicht nur die Kenntnisse, wie man Whisk(e)y macht, sondern ganz sicher auch das Bedürfnis, ihn zu trinken, mitgebracht haben.
Doch als die eigene Whiskyproduktion 1866 mit dem Bau der Myers Distillery in Ballarat, Victoria, begann, war die Konkurrenz der Importe aus dem Mutterland zu mächtig. erst als die Regierung in den zwanziger Jahren die Einfuhrzölle für Spirituosen erhöhte, wurde die Sache wirtschaftlich interessant, und Myers brachte mit dem Blend Old Court erstmals eine erfolgreiche australische Marke heraus.
Das blieb auch dem schottischen Brennereikonzern DLC nicht verborgen, der sich 1927 mit vier lokalen Herstellern zusammentat, um eine moderene Destillerie in Corio, Victoria, zu erichten. Aus dieser Zusammenarbeit erwuchs 1931 die Gruppe United Distillers - nicht zu verwechseln mit dem späteren DLC-Nachfolger United Distillers -, die bis vor einigen Jahren zwei der erfolgreichsten ausralischen Whiskys produzierte: Corio und Four Seasons.
Eine andere bedeutende Marke, Bond 7, wurde ebenfalls von einer britischen Firma hergestellt, nämlich von Gilbey.In den 50er und 60er Jahren erfuhr der Australische Whisky ein Umsatzhoch, das leider nur von verübergehender Dauer war. Die schottische Konkurrenz war einfach zu mächtig. So sank die Nachfrage in den 80er Jahren so stark, dass die großen Hersteller die Produktion einstellten, zuletzt United Distillers. Hier spürt man den schottischen Einfluß: Bevor man 1995 komplett den Betrieb einstellte wurden die großen Lagerbestände kurzerhand zu absatzfähigeren Gin umdestilliert, da das Publikum immer mehr zu schottischen Blends und vor allem zum Bourbon griff.
Ungefähr zur gleichen Zeit stiegen in Tasmanien zwei wagemutige Kleinbrenner ins Geschäft ein:1993 wurde die Small Concern Whisky Distillery gegründet, 1995 die Tasmania Distillery, beide brachten inzwischen eígene marken heraus: Cradle Mountain und Sullivans Cove.
Herstellung
Alle wichtigen Brennereien waren im Südosten des Landes zu finden, in der Gegend um Melbourne und in Adelaide. das dortige Klima bekam nicht nur den ersten europäischen Siedlern, es bringt auch das beste Getreide Australiens hervor und gewährleistet eine ausreichende Wasserversorgung.
Australischer Whisky wird aus Gerste, Mais und Hirse hergestellt. Malt Whisky darf nur aus gerstenmalz gebrannt werden und muss mindestens 2 Jahre lagern, Blended Whisky muss ebenso lang im Fass liegen und mindestens 25% Malt enthalten.

Black & White wurde von James Buchanan kreiert, einem echten und geselligen Charakter und einem der großen Whisky-Barone der Geschichte. Ursprünglich hieß er The Buchanan Blend und wurde in einer Schwarz-Weiß-Flasche verkauft. Aus "That black and white whisky" wurde 1902 "Black & White". Buchanan wollte eine Blend anbieten, der die breite Öffentlichkeit ansprechen würde. Das Ergebnis ist ein sehr zugänglicher Blended Scotch Whisky, der mittlerweile bis nach Indien, Südafrika und in ganz Lateinamerika und der Karibik verbreitet ist.
